Equipment

  • 1 large mixing bowl (for dry ingredients)

Ingredients
  

  • 2 medium zucchinis grated
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 pinch salt
  • 2 large eggs
  • 1 cup brown sugar
  • ½ cup vegetable oil or coconut oil
  • 1 teaspoon vanilla extract

Optional: ½ cup chocolate chips, nuts, or raisins (for add-ins)

Instructions
 

Preheat the Oven & Prepare the Pan

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper.

Prepare the Zucchini

  • Grate the zucchinis and squeeze out the excess moisture using a clean kitchen towel or paper towels.

Mix Dry Ingredients

  • In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.

Mix Wet Ingredients

  • In another bowl, whisk together eggs, brown sugar, oil, and vanilla extract until smooth.

Combine Wet and Dry Ingredients

  • Slowly add the dry ingredients to the wet ingredients and stir until just combined.

Add Zucchini and Mix

  • Stir in the grated zucchini, ensuring it’s evenly distributed.

Fold in Optional Add-ins

  • If using chocolate chips, nuts, or dried fruits, gently fold them into the batter.

Bake

  • Pour the batter into the prepared baking pan and spread it evenly.
    Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Cool & Slice

  • Allow the bars to cool in the pan on a wire rack before cutting into squares.

Notes

  • Customizing Add-ins: You can add chocolate chips, chopped walnuts, raisins, or dried cranberries to make the bars even more exciting. Just fold them into the batter before baking.
  • Sugar Substitutes: You can substitute brown sugar with coconut sugar or maple syrup for a more natural sweetener.
  • Making It Vegan: For a vegan version, substitute the eggs with flax eggs (1 tablespoon ground flaxseed + 3 tablespoons water) and use coconut oil instead of vegetable oil.
  • Storing: Store the bars in an airtight container at room temperature for up to 3-4 days, or freeze for up to 2 months. Thaw before eating or warm them in the microwave for a few seconds.
