Ingredients
  

  • 3 large ripe bananas mashed
  • cup coconut oil melted (or unsweetened applesauce)
  • ¾ cup plant-based milk almond, soy, or oat
  • ½ cup brown sugar or coconut sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour or gluten-free flour blend
  • 1 tsp baking soda
  • ½ tsp cinnamon optional
  • ¼ tsp salt
  • ½ cup chopped walnuts or vegan chocolate chips optional

Instructions
 

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

Mash the Bananas

  • In a large bowl, mash the bananas until smooth.

Mix Wet Ingredients

  • Add the melted coconut oil, plant-based milk, brown sugar, and vanilla extract to the bananas. Stir until well combined.

Combine Dry Ingredients

  • In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.

Mix Wet and Dry Ingredients

  • Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
    Do not overmix.

Add Optional Mix-Ins

  • Fold in walnuts or chocolate chips if desired.

Pour and Bake

  • Pour the batter into the prepared loaf pan.
    Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Serve

  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack.
    Allow it to cool completely before slicing.

  • Overripe bananas are essential for the best flavor and texture. Look for bananas with plenty of brown spots.
