Ingredients
  

  • 1 small Cauliflower cut into florets (about 2 cups)
  • 1 pack Tikka Masala Sauce adjust for spice preference
  • Salt to taste
  • Ghee or oil as needed (optional, for extra crispiness)

Instructions
 

  • Prep and Wash Cauliflower Florets: Start by selecting a fresh, small cauliflower or about 2 cups of florets.
    Wash the cauliflower thoroughly under running water to remove any dirt or impurities.
    Pat dry with a clean kitchen towel or paper towel.
    Make sure the florets are completely dry so that the marinade sticks well and the bites get a nice crispy texture during baking or air frying.
  • Prepare the Tikka Masala Marinade: Take about half a pack of your favorite Tikka Masala sauce.
    This serves 2 people and is perfect for a moderate spice level.
    Pour the sauce into a large mixing bowl.
    If you prefer extra creaminess or tang, you can optionally add a teaspoon of yogurt or a small drizzle of lemon juice.
    Stir well to make a smooth marinade base.
  • Marinate the Cauliflower Florets: Add the dried cauliflower florets into the bowl with the prepared Tikka Masala sauce.
    Sprinkle a pinch of salt over the florets to enhance the flavor.
    Using a spatula or your hands, gently toss each floret until they are evenly coated in the vibrant red masala.
    Cover the bowl with a lid or plastic wrap and let it rest in the refrigerator for at least 1 hour.
    This allows the cauliflower to absorb all the aromatic flavors, ensuring every bite is packed with taste.
  • Preheat the Oven for Baking: If you plan to bake the cauliflower, preheat your oven to 400°F (200°C).
    Line a baking tray with parchment paper or lightly grease it to prevent sticking.
    Preheating the oven ensures that the cauliflower cooks evenly and develops a slightly charred exterior, mimicking the traditional tandoor flavor.
  • Arrange Cauliflower on Baking Tray: Once marinated, gently place the cauliflower florets on the prepared baking tray in a single layer.
    Avoid overcrowding the tray, as this can prevent proper browning and crispiness.
    For extra richness and a golden texture, lightly brush or drizzle some ghee or oil over the florets.

  • Bake the Cauliflower Until Tender: Slide the tray into the preheated oven and bake for 20–25 minutes.
    Halfway through the baking process, gently toss or flip the florets to ensure even cooking on all sides.
    The cauliflower should become tender inside while developing a slightly firm and crispy exterior.
  • Broil for a Charred Finish: For that signature tandoori look and smoky flavor, switch your oven to broil on high for 2–3 minutes after baking.
    Keep a close eye during broiling to prevent burning.
    The florets should have a lightly charred, reddish-brown finish, enhancing both taste and visual appeal.
  • Preheat Air Fryer (Alternative Method): If you prefer air frying, preheat your air fryer to 360°F (182°C) for 5 minutes.
    This step ensures the basket reaches the ideal temperature to create a crispy exterior while keeping the florets tender inside.
  • Air Fry the Marinated Cauliflower: Place the marinated florets in the air fryer basket in a single layer.
    Lightly brush or spray with ghee or oil to help achieve crispiness.
    Air fry for 16–18 minutes, shaking the basket halfway through cooking to ensure even browning.
    The florets should emerge with a beautiful reddish-golden color and a satisfying crunch.
  • Serve with Dips or Chutney: Once cooked, transfer the Tandoori Cauliflower Bites to a serving plate.
    Pair them with your favorite dip, such as creamy yogurt, green chutney, or tangy tamarind sauce.
