Ingredients
  

For the Salad:

  • 4 cups fresh spinach washed and dried
  • 1 ½ cups fresh strawberries sliced
  • ½ cup sliced almonds or walnuts/pecans
  • ½ cup crumbled feta cheese or goat cheese

For the Dressing:

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • ¼ cup olive oil
  • Salt and pepper to taste

Instructions
 

Prepare the Ingredients:

  • Wash and dry the spinach. Slice the strawberries into thin pieces.
    If using, toast the almonds or your preferred nuts in a small dry pan over medium heat for 3-4 minutes until fragrant.

Make the Dressing:

  • In a small bowl, whisk together balsamic vinegar, honey (or maple syrup), and Dijon mustard.
    Slowly drizzle in olive oil while whisking to emulsify.
    Season with salt and pepper to taste.

Assemble the Salad:

  • In a large salad bowl, combine the spinach and strawberries. Toss gently.

Add Nuts and Cheese:

  • Sprinkle toasted almonds (or your choice of nuts) and crumbled feta cheese over the salad.

Serve:

  • Drizzle the balsamic dressing over the salad just before serving.
    Toss to combine and enjoy immediately!
