Ingredients
  

  • 2 medium ripe bananas sliced
  • 1 cup fresh or frozen strawberries hulled and sliced
  • 1 cup full-fat coconut milk or preferred plant-based milk
  • 2 tbsp maple syrup or sweetener of choice
  • 1 tsp vanilla extract

Optional: 1/4 cup coconut cream for extra creaminess

Instructions
 

Prepare the Fruit

  • Peel and slice the bananas into chunks and slice the strawberries.
  • Arrange the fruit on a baking sheet or plate and freeze for at least 2 hours or until solid.

Blend the Ingredients

  • Once the fruit is frozen, add it to a high-speed blender or food processor.
  • Add the coconut milk, maple syrup, and vanilla extract.
  • Blend until smooth and creamy, scraping the sides as needed.

Freeze the Mixture

  • Transfer the blended mixture to a shallow container or loaf pan. Smooth out the top with a spatula.
  • Freeze for 3-4 hours, or until firm and scoopable.

Serve

  • Once the ice cream is ready, scoop it into bowls or cones.
  • Garnish with extra fruit, a drizzle of honey, or a sprinkle of granola for added texture.
