Instructions
Step 1: Prepare the Chicken Breasts
Butterfly the chicken breasts by carefully cutting horizontally through the thickest part to create a pocket, making sure not to cut all the way through. Season both sides with salt and pepper.
Step 2: Make the Spinach Feta Filling
In a skillet, heat olive oil over medium heat. Sauté the garlic for 1 minute until fragrant, then add the spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool. Once cooled, drain any excess moisture.In a mixing bowl, combine the spinach, crumbled feta, cream cheese or ricotta, parsley, oregano, and red pepper flakes. Mix until well combined.
Step 3: Stuff the Chicken Breasts
Stuff each chicken breast with the spinach and feta mixture. Secure the opening with toothpicks or kitchen twine to hold the filling inside.
Step 4: Sear the Chicken
Heat olive oil in a large skillet over medium-high heat. Add the stuffed chicken breasts and cook for 3-4 minutes on each side until golden brown.
