Ingredients
  

  • 10 cups 1 loaf Crusty Bread (French bread or sourdough), cubed
  • 4 cups Fresh Spinach chopped (or frozen, thawed and drained)
  • 1 cup Feta Cheese crumbled
  • 6 Large Eggs
  • 2 cups Milk whole milk or a milk-cream mixture
  • 1 tbsp Dijon Mustard
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Nutmeg optional
  • 1 Medium Onion finely chopped
  • 2 cloves Garlic minced
  • 2 tbsp Olive Oil or butter for sautéing
  • Fresh Herbs optional, for garnish

Instructions
 

Prepare the Bread

  • Preheat the oven to 350°F (175°C). Cube the crusty bread into bite-sized pieces and spread them evenly in a buttered 9x13-inch baking dish.

Cook the Spinach

  • Heat 1 tablespoon olive oil in a sauté pan over medium heat.
    Add the chopped onion and cook until softened, about 5 minutes.
    Stir in the minced garlic and cook for another 30 seconds.
    Add the spinach and cook until wilted (about 3-5 minutes for fresh spinach).
    If using frozen spinach, ensure it’s thoroughly drained.

Layer the Strata

  • Spread the sautéed spinach mixture evenly over the bread cubes. Sprinkle the crumbled feta cheese evenly on top.

Make the Custard

  • In a large mixing bowl, whisk together the eggs, milk, Dijon mustard, salt, black pepper, and nutmeg.
    Pour this mixture evenly over the bread, pressing gently to ensure the bread absorbs the custard.

Refrigerate Overnight

  • Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the bread to soak up the custard.

Bake the Strata

  • Preheat the oven to 350°F (175°C). Bake the strata, uncovered, for 40-45 minutes, or until the top is golden brown and the center is set.
    If the top browns too quickly, cover it loosely with foil.

Rest and Serve

  • Let the strata rest for about 5-10 minutes before slicing.
    Garnish with fresh herbs, if desired. Serve warm and enjoy!
