Ingredients
  

  • 2 small limes juiced (plus extra for serving)
  • Zest of 1 lime plus extra for garnish
  • 2 Tbsp 30 ml extra virgin olive oil
  • 1 –2 small Thai or hot chili peppers finely chopped, seeds removed
  • Coarse sea salt to taste
  • 1 long seedless English cucumber peeled and sliced
  • 1 large ripe mango peeled and cut into cubes
  • 1 –2 Tbsp fresh mint chopped
  • About 12 small skewers

Instructions
 

  • Prepare the Dressing: In a large shallow mixing bowl, combine the juice of two small limes and the zest of one lime.
    Add 2 tablespoons (30 ml) of extra virgin olive oil and the finely chopped Thai chili peppers.
    Whisk thoroughly until the oil, citrus, and chili are fully emulsified.
    Taste and season with a pinch of coarse sea salt.
    This dressing will provide a tangy, slightly spicy base that coats the fruits and vegetables perfectly.
  • Slice the Vegetables and Fruits: Carefully peel the long seedless English cucumber and slice it into bite-sized rounds or small rectangles, depending on your preference for skewering.
    Peel the ripe mango and cut it into evenly sized cubes roughly the same size as the cucumber slices.
    Keeping the pieces uniform ensures they stay on the skewers easily and look visually appealing.
  • Toss Cucumber and Mango in Dressing: Gently add the cucumber and mango pieces to the bowl with the dressing.
    Using a large spoon or your hands, toss everything together lightly.
    Make sure each piece is coated evenly with the tangy, slightly spicy mixture, but avoid crushing the fruit.
    The goal is to infuse every bite with flavor while maintaining the fresh, crisp texture of the cucumber and the juicy sweetness of the mango.

  • Thread the Cucumber and Mango: Remove the cucumber and mango mixture from the fridge.

    This not only looks appealing but also makes the skewers easy to pick up and enjoy.
  • Garnish and Add Finishing Touches: Once all skewers are assembled, sprinkle extra lime zest and freshly chopped mint over the top.
    If desired, add a tiny pinch of coarse sea salt to enhance the flavors further.
