Ingredients
  

For the Lentil Filling:

  • 1 cup dried lentils
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tablespoon taco seasoning or homemade blend
  • 1 can 14.5 oz diced tomatoes
  • 1 cup vegetable broth

For the Toppings:

  • 1 cup shredded lettuce or cabbage
  • 1/2 cup diced avocado
  • 1/4 cup chopped fresh cilantro
  • 1 lime cut into wedges
  • 1/4 cup salsa optional
  • 1/4 cup shredded cheese optional

Instructions
 

  • Cook the Lentils: Rinse the lentils and cook them according to package instructions.
    Alternatively, cook them in vegetable broth for added flavor. Drain any excess liquid and set aside.
  • Sauté Aromatics: Heat olive oil in a large skillet over medium heat.
    Add the diced onion and minced garlic, cooking until the onion is soft and translucent, about 3-5 minutes.
  • Add the Lentils and Seasoning: Stir in the cooked lentils and taco seasoning. Pour in the diced tomatoes and vegetable broth, stirring to combine.
    Let the mixture simmer for 5-7 minutes, allowing the flavors to meld and the liquid to reduce.
  • Warm the Taco Shells: While the lentil filling simmers, warm your taco shells in the oven or on a dry skillet for a few minutes.
  • Assemble the Tacos: Spoon the lentil filling into each taco shell.
    Top with shredded lettuce or cabbage, diced avocado, cilantro, and a squeeze of lime juice. Optional: Add salsa and shredded cheese if desired.
  • Serve and Enjoy: Serve the tacos immediately with extra lime wedges and enjoy your delicious, spicy lentil tacos!
