Equipment

  • 1 Skillet (12-inch or large size) – for cooking the sausage and vegetables
  • 1 9x13-inch Baking Dish – for assembling the casserole
  • 1 Mixing Bowl – for whisking the eggs and milk
  • Aluminum Foil – for covering the casserole while baking
  • Measuring Cups – for measuring liquids and bread
  • Measuring Spoons – for seasoning

Ingredients

  • 1 lb Breakfast Sausage your choice of mild or spicy
  • 12 Large Eggs
  • 1 cup Whole Milk
  • 4 cups Stale Bread cubed, any type you prefer
  • 2 cups Shredded Cheddar Cheese or a mix of cheeses
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Garlic Powder

Optional: 1/2 cup sautéed vegetables (like bell peppers, onions, or spinach)

Instructions

  • Cook the Sausage: In a large skillet, cook the sausage over medium heat until browned and crumbled.
Drain excess grease and set aside.
  • Prepare the Bread: Tear the bread into bite-sized cubes and spread them evenly in a greased 9x13-inch baking dish.
  • Mix the Egg Mixture: In a mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder.
  • Layer the Casserole: Evenly distribute the cooked sausage over the bread cubes.
Pour the egg mixture over the bread and sausage, ensuring everything is soaked in the egg. Sprinkle shredded cheese on top.
  • Bake: Cover the casserole with aluminum foil and bake at 350°F (175°C) for 30 minutes.
Then remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown and the casserole is set.
  • Rest and Serve: Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

  • Customize It: Feel free to add sautéed vegetables like onions, bell peppers, or spinach to enhance the flavor and texture. You can also experiment with different types of cheese or use a combination of sharp cheddar and mozzarella for extra creaminess.
  • Make Ahead: This casserole can be assembled the night before and refrigerated overnight. In the morning, simply bake as directed.
  • Freezing: The casserole can be frozen after baking. Cool completely, wrap tightly in plastic wrap and foil, and freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for about 40-50 minutes when ready to serve.
  • Adjust to Your Taste: Swap the sausage for turkey sausage or chorizo, or add a sprinkle of red pepper flakes if you like a little heat. The dish can be made low-carb by omitting the bread and adding more vegetables.
