Ingredients
  

  • 1 Fresh Pineapple peeled and chopped
  • 1 Red Bell Pepper diced
  • 1 Cucumber diced
  • 1/2 Red Onion finely diced
  • 1/4 cup Fresh Mint Leaves chopped
  • 2 tbsp Lime Juice
  • 1-2 tsp Honey or Maple Syrup optional
  • 1/4 tsp Salt or to taste
  • 1/4 tsp Black Pepper or to taste

Instructions
 

  • Prepare the pineapple: Peel, core, and chop the pineapple into bite-sized cubes.
  • Chop the vegetables: Dice the red bell pepper, cucumber, and red onion.
    Finely chop the mint leaves.
  • Combine ingredients: In a large bowl, mix together the pineapple, red bell pepper, cucumber, red onion, and fresh mint.
  • Dress the salad: Squeeze the lime juice over the salad and drizzle honey or maple syrup for extra sweetness if desired.
    Add salt and pepper, then toss to combine.
  • Serve: Garnish with extra mint leaves and serve immediately. Enjoy the fresh flavors of your tropical salad!
