Ingredients
  

  • 4 Boneless Skinless Chicken Breasts (or thighs)
  • 1/4 cup Pesto Sauce store-bought or homemade
  • 2 tbsp Olive Oil
  • 3 Garlic Cloves minced
  • 4 cups Fresh Spinach
  • 1/4 cup Parmesan Cheese grated (optional)
  • Salt and Pepper to taste

Instructions
 

  • Prepare the Chicken: Season the chicken breasts (or thighs) with salt, pepper, and a drizzle of olive oil. Heat a large skillet over medium-high heat and sear the chicken for about 5-7 minutes per side, or until golden brown. Remove from the skillet and set aside.
  • Sauté Garlic: In the same skillet, add a bit more olive oil if needed. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  • Add Pesto and Spinach: Pour the pesto sauce into the skillet and stir to combine with the garlic. Add the spinach and cook until wilted, about 3-4 minutes.
  • Simmer the Chicken: Return the chicken to the skillet and reduce the heat to low. Simmer for an additional 5-7 minutes or until the chicken is fully cooked through (165°F internal temperature).
  • Garnish and Serve: Optionally, sprinkle grated Parmesan cheese over the top. Serve immediately with your favorite side dishes, like pasta, rice, or roasted vegetables.

Notes

  • Customize the Pesto: Feel free to make your own pesto at home by blending fresh basil, garlic, pine nuts, Parmesan, and olive oil. You can also try variations like sun-dried tomato pesto for a twist.
  • Substitute the Chicken: If you prefer, chicken thighs can be used instead of breasts for a juicier cut of meat.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, gently warm in a skillet with a splash of water or pesto sauce to maintain moisture.
