Equipment

  • 1 Ninja Creami Ice Cream Maker
  • 1 medium mixing bowl
  • 1 Whisk
  • 1 Fine Mesh Sifter (for matcha)
  • 1 Measuring Cup Set
  • 1 Measuring Spoon Set
  • 1 Ninja Creami Pint Container with Lid

Ingredients

For the Ice Cream Base:

  • 1 cup whole milk or almond/coconut milk for dairy-free
  • ¾ cup heavy cream or coconut cream for extra richness
  • ½ cup granulated sugar or preferred sweetener
  • 1 tablespoon high-quality matcha powder ceremonial-grade preferred
  • 1 teaspoon vanilla extract
  • A pinch of salt

Optional Add-ins and Toppings:

  • 1 tablespoon white chocolate chips
  • 1 tablespoon sweet red bean paste
  • 1 teaspoon toasted coconut flakes
  • Drizzle of honey or condensed milk
  • Mochi pieces or whipped cream

Instructions

Step 1: Prepare the Matcha Mixture

  • Sift the matcha powder into a small bowl to remove any clumps.
  • Add 2 tablespoons of warm water and whisk vigorously until the matcha is smooth and fully dissolved.

Step 2: Mix the Ice Cream Base

  • In a medium mixing bowl, combine the whole milk, heavy cream, sugar, vanilla extract, and salt.
  • Add the matcha mixture and whisk until everything is well incorporated and the color is vibrant green.

Step 3: Chill the Mixture

  • Pour the ice cream base into the Ninja Creami pint container.
  • Secure the lid and place it in the freezer for at least 24 hours.
The mixture must be completely frozen before processing.

Step 4: Process in the Ninja Creami

  • Once frozen, insert the pint into the Ninja Creami machine.
  • Select the “Ice Cream” function and let it process until smooth.
  • If the texture appears crumbly, use the Re-spin function for a creamier consistency.

Step 5: Serve and Enjoy

  • Scoop into bowls or cones and serve immediately.
  • Add your favorite toppings like mochi, red bean paste, white chocolate chips, or a drizzle of honey.
  • Store leftovers properly in the freezer (see storage tips below).

Notes

  • Matcha Selection: Use ceremonial-grade matcha for the best taste and color. Culinary-grade matcha may work but could be more bitter.
  • Dairy-Free Option: Substitute whole milk with almond or oat milk and use coconut cream instead of heavy cream.
  • Re-spinning Tip: If your ice cream turns out crumbly, Re-spin it once or twice for a smoother texture.
  • Storage: Keep leftover ice cream in the Ninja Creami pint container, sealed well. Let it sit at room temperature for 5-10 minutes before re-spinning if too firm.
  • Adjusting Sweetness: If you prefer a less sweet version, reduce the sugar to ⅓ cup or use an alternative sweetener like monk fruit.
