Equipment

  • 1 Baking sheet (medium size)
  • 1 Small glass bowl
  • 1 Basting brush
  • Aluminum foil (enough to lightly cover rolls)

Ingredients

  • 16 Chicken nuggets
  • 1 package 12-count Sister Schubert’s Dinner Yeast Rolls
  • 2 tablespoons Honey
  • 4 tablespoons Butter melted

Instructions

  • Preheat Oven for Perfect Baking: Begin by setting your oven to 300°F (150°C) to ensure a gentle, even heat that will allow both the rolls and chicken nuggets to warm thoroughly without drying out.
Preheating is essential because it ensures your rolls stay soft while the chicken crisps up nicely.
  • Prepare Rolls for Gentle Heating: Take the dinner rolls out of the package and arrange them on a baking sheet.
Lightly cover them with a piece of aluminum foil to prevent excessive browning or drying during the initial baking stage.
This will help retain their soft, fluffy texture.
  • Start Baking the Rolls: Place the foil-covered rolls in the preheated oven for 15 minutes.
This step allows the rolls to warm evenly and start puffing up, creating a soft base for your chicken nuggets.
  • Add Chicken Nuggets to Oven: After the rolls have baked for 15 minutes, take the tray out briefly and add the chicken nuggets to the same baking sheet.
Make sure they are spread out evenly and not touching each other to ensure even cooking.
Return the tray to the center rack of the oven and continue baking for an additional 15 minutes.
  • Turn Chicken for Even Crisping: About halfway through this second baking period, open the oven and carefully flip each chicken nugget using tongs.
This step ensures that both sides become golden brown and crispy while preventing uneven cooking.
  • Prepare Honey-Butter Glaze: While the rolls and chicken are baking, make the signature honey-butter topping.
In a small glass bowl, add the butter and microwave it for 20–30 seconds until fully melted.
Stir in the honey thoroughly until smooth and well-combined.
Set this aside; it will add a shiny, flavorful finish to the biscuits.
  • Slice Rolls for Sandwich Assembly: Once the rolls and chicken are fully cooked, remove the tray from the oven.
Let them cool slightly so they are easier to handle.
Then, carefully turn each roll upside down on a plate and slice it in half horizontally, creating a top and bottom layer for each mini biscuit.
  • Assemble Mini Chicken Biscuits: Place the bottom halves of the rolls back on the baking sheet.
Top each with a perfectly cooked chicken nugget.
Carefully place the top halves of the rolls over the chicken, forming a sandwich.
Make sure each biscuit is centered and balanced for easy eating.
  • Brush with Honey-Butter Glaze: Using a basting brush, generously coat the top of each mini biscuit with the prepared honey-butter mixture.
This step not only adds sweetness and flavor but also gives the rolls a golden, glossy finish that is visually appealing and irresistible.
  • Serve Immediately and Enjoy: Your mini chicken biscuits are now ready to serve.
They are best enjoyed fresh out of the oven while the rolls are soft and the chicken is warm and crispy.
Serve them as a quick snack, an easy lunch, or a family-friendly dinner that everyone will love.

Notes

  • Use fully cooked chicken nuggets for convenience and consistent results.
  • Soft dinner rolls are essential for the ideal texture; avoid overly dense or dry varieties.
  • Adjust honey in the glaze according to your sweetness preference.
  • Baking on the center rack ensures even heat distribution and prevents burning.
  • For extra flavor, lightly season chicken nuggets with paprika or garlic powder before baking.
  • Serve immediately after assembly for best texture; rolls can become soggy if left too long.
  • Aluminum foil prevents rolls from drying out but remove it slightly if you want a lightly crisp top.
