Ingredients
  

For the Salad

  • 2 large ripe mangoes peeled and diced
  • 1 medium red bell pepper diced
  • 1 small cucumber sliced into half-moons
  • ¼ small red onion thinly sliced
  • ¼ cup fresh cilantro chopped
  • 1 small jalapeño finely chopped (optional)
  • ½ medium avocado diced (optional)

For the Dressing

  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 1 tsp honey or maple syrup
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red chili flakes optional

Instructions
 

Step 1: Prepare the Ingredients

  • Peel and dice the mangoes into small, even cubes.
    Dice the red bell pepper, slice the cucumber, and thinly slice the red onion.
    Chop the cilantro and jalapeño, if using.

Step 2: Make the Dressing

  • In a small bowl, whisk together the lime juice, olive oil, honey (or maple syrup), salt, black pepper, and red chili flakes. Mix until well combined.

Step 3: Assemble the Salad

  • In a large mixing bowl, combine the mangoes, bell pepper, cucumber, onion, and cilantro. If using jalapeño or avocado, add them now.

Step 4: Toss and Serve

  • Drizzle the dressing over the salad and gently toss everything together. Let the salad sit for 5 minutes to allow the flavors to meld.
    Serve immediately or chill before serving.

Notes

  • Mango Selection: Use firm, ripe mangoes for the best texture. Overripe mangoes can become too mushy.
  • Storage Tips: Store in an airtight container in the refrigerator for up to 2 days. Avoid freezing.
