- 1 cup rolled oats (plus extra for topping)
- 1 packet (2 1/4 tsp) active dry yeast
- 1 1/4 tsp salt
- 1/4 cup honey
- 2 tbsp unsalted butter, melted
- 1 cup warm milk (about 110°F)
- 1/4 cup warm water (about 110°F)
In a medium bowl, combine warm water, honey, and yeast. Let it sit for 5–7 minutes until frothy.
In a large mixing bowl, combine the flour, rolled oats, and salt.
Add the yeast mixture, warm milk, and melted butter to the dry ingredients. Stir until a sticky dough forms.
If using hands: Knead on a lightly floured surface for about 8–10 minutes until smooth and elastic.
If using a stand mixer: Use the dough hook on medium speed for 5–6 minutes.
Place the dough in a lightly oiled bowl. Cover with a kitchen towel and let rise in a warm place for 1–1.5 hours, or until doubled in size.
Punch down the dough and shape it into a loaf. Place it in a greased loaf pan and cover again. Let rise for another 30–45 minutes.
Preheat your oven to 375°F (190°C). Lightly brush the loaf with water or milk and sprinkle extra oats on top.
Bake for 30–35 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom.
Remove the bread from the pan and let it cool on a wire rack for at least 20 minutes before slicing.
