Equipment

  • 1 large mixing bowl
  • 1 medium mixing bowl
  • 1 measuring cup
  • Measuring spoons
  • 1 wooden spoon or spatula
  • 1 stand mixer with a dough hook (optional)
  • 1 loaf pan (9x5 inches)
  • 1 kitchen towel
  • 1 wire cooling rack

Ingredients

  • 3 cups all-purpose flour
  • 1 cup rolled oats (plus extra for topping)
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 1/4 tsp salt
  • 1/4 cup honey
  • 2 tbsp unsalted butter, melted
  • 1 cup warm milk (about 110°F)
  • 1/4 cup warm water (about 110°F)

Instructions

  • In a medium bowl, combine warm water, honey, and yeast. Let it sit for 5–7 minutes until frothy.
  • In a large mixing bowl, combine the flour, rolled oats, and salt.
  • Add the yeast mixture, warm milk, and melted butter to the dry ingredients. Stir until a sticky dough forms.
  • If using hands: Knead on a lightly floured surface for about 8–10 minutes until smooth and elastic.
  • If using a stand mixer: Use the dough hook on medium speed for 5–6 minutes.
  • Place the dough in a lightly oiled bowl. Cover with a kitchen towel and let rise in a warm place for 1–1.5 hours, or until doubled in size.
  • Punch down the dough and shape it into a loaf. Place it in a greased loaf pan and cover again. Let rise for another 30–45 minutes.
  • Preheat your oven to 375°F (190°C). Lightly brush the loaf with water or milk and sprinkle extra oats on top.
  • Bake for 30–35 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom.
  • Remove the bread from the pan and let it cool on a wire rack for at least 20 minutes before slicing.

Notes

  • For a softer crust, brush the bread with melted butter as it cools.
  • You can substitute whole-wheat flour for half the all-purpose flour for a heartier loaf.
  • Add-ins like sunflower seeds or dried cranberries can enhance flavor and texture.
  • Store leftover bread in an airtight container at room temperature for up to 3 days or freeze slices for up to 2 months.
