Ingredients
  

For the Beef Mixture:

  • 1 lb ground beef
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar

For the Veggies:

  • 3 cups cabbage shredded
  • 1 cup carrots shredded
  • 2 tablespoons sesame oil

For Garnishing:

  • 2 green onions chopped
  • 1 tablespoon sesame seeds
  • Crushed peanuts optional

Instructions
 

Cook the Ground Beef:

  • In a large skillet or wok, heat a small amount of oil over medium heat.
    Add the ground beef and cook, breaking it up with a spoon, until it’s fully browned, about 5-7 minutes.
    Drain any excess fat, then add the minced garlic and grated ginger. Cook for another 1-2 minutes until fragrant.

Add Soy Sauce and Rice Vinegar:

  • Pour in the soy sauce and rice vinegar. Stir everything together and allow it to simmer for another 2-3 minutes, letting the flavors meld.

Stir-Fry the Vegetables:

  • While the beef is cooking, heat the sesame oil in a separate pan over medium-high heat.
    Add the shredded cabbage and carrots, stir-frying for 5-7 minutes, until they’re tender yet still crunchy.

Combine Beef and Veggies:

  • Once the veggies are done, add them to the skillet with the ground beef.
    Stir everything together for another 2-3 minutes so the flavors mix well.

Garnish and Serve:

  • Serve the egg roll bowl in individual bowls and garnish with chopped green onions, sesame seeds, and optional crushed peanuts for extra crunch.

Notes

  • Protein Options: You can easily swap the ground beef for ground turkey or ground chicken for a leaner version. Alternatively, you can use tofu for a vegetarian option.
  • Vegetable Variations: Feel free to add or swap in other veggies like bell peppers, snap peas, or mushrooms to suit your taste.
