These Grilled Peach and Burrata Crostini are a quick, elegant appetizer featuring juicy peaches, creamy burrata, fresh basil, and prosciutto on toasted baguette slices.

Ingredients
  

  • 3 ½ tablespoons extra virgin olive oil
  • 1 French or sourdough baguette sliced into ¼-inch pieces
  • 1 bunch fresh basil leaves
  • 2 balls burrata cheese
  • 4 ripe peaches sliced and pitted
  • 4 ounces thinly sliced prosciutto
  • Salt and pepper to taste
  • Balsamic vinegar optional, for drizzling

Instructions
 

  • Preheat the Grill: Start by preheating your grill or grill pan to medium-high heat.
    Ensuring the grill is hot before adding ingredients helps create those perfect golden-brown marks on the baguette slices and peaches, locking in flavor and texture.
    If using a stovetop grill pan, lightly oil the surface to prevent sticking.
  • Prepare the Baguette and Peaches: While the grill is heating, brush each baguette slice lightly with extra virgin olive oil on both sides.
    This not only enhances flavor but also ensures the bread crisps evenly on the grill.
    Then, season both sides of the peach slices with a pinch of salt and a dash of black pepper.
    This simple seasoning brings out the natural sweetness of the peaches.
  • Grill the Baguette Slices: Place the oiled baguette slices directly onto the preheated grill.
    Allow them to toast for about 2 minutes on the first side without moving them, so they develop a nice, golden-brown crust.
    Flip each slice and grill for an additional 2 minutes.
    Once toasted, remove the slices from the grill and set them aside on a clean plate or tray to cool slightly.
  • Grill the Peaches: Next, add the peach slices to the grill. Grill them for approximately 2 to 3 minutes per side.
    You want the peaches to soften slightly and develop grill marks, but avoid overcooking so they don’t become mushy.
    Carefully flip them with a spatula to keep the slices intact.
    Once done, remove the peaches from the grill and let them cool just enough to handle.
  • Assemble the Crostini Base: Take each grilled baguette slice and layer it with a fresh basil leaf.
    The basil adds a fragrant herbal note that complements the creamy burrata and sweet peaches perfectly.
  • Add Burrata Cheese: Using a spoon or your hands, gently tear or scoop about 1–2 tablespoons of burrata cheese and place it on top of the basil.
    The creamy texture of burrata will slightly melt against the warm bread, creating a rich, luxurious base for the peaches.
  • Top with Grilled Peaches: Carefully place a slice of grilled peach on top of the burrata.
    The peach should sit snugly on the cheese, creating a balance of sweetness and creaminess in every bite.
  • Add Prosciutto: Drape a thin slice of prosciutto over each crostini.
    The salty, savory flavor of prosciutto contrasts beautifully with the sweet peaches and creamy burrata, adding a gourmet touch to your appetizer.
  • Season and Finish: Optionally, drizzle a small amount of balsamic vinegar over each crostini for a tangy, slightly sweet finish.
    Then, sprinkle lightly with salt and freshly cracked black pepper to enhance all the flavors.
