Equipment

  • 1 Grill Pan
  • 1 Whisk
  • 1 small bowl (for dressing)
  • 1 Large Salad Bowl (for mixing)
  • 1 Tongs (for handling chicken)
  • 1 Meat Thermometer (optional, for checking chicken)

Ingredients

For the Grilled Chicken:

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 teaspoon Italian seasoning

For the Caesar Dressing:

  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon fresh lemon juice
  • 1/4 cup grated Parmesan cheese
  • 1 small clove garlic minced
  • Salt and black pepper to taste

For the Salad:

  • 4 cups romaine lettuce chopped
  • 1/4 cup shaved Parmesan cheese
  • 1/2 cup croutons

Instructions

Marinate and Grill the Chicken:

  • Marinate the chicken breasts with olive oil, lemon juice, garlic powder, salt, pepper, and Italian seasoning for 15–20 minutes.
Preheat your grill or grill pan to medium-high heat and cook the chicken for 5-6 minutes per side or until fully cooked.
Allow the chicken to rest for a few minutes before slicing into strips.

Prepare the Caesar Dressing:

  • In a small bowl, whisk together mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, grated Parmesan cheese, minced garlic, salt, and pepper. Taste and adjust seasoning as needed.

Assemble the Salad:

  • In a large salad bowl, toss chopped romaine lettuce with grilled chicken slices. Add shaved Parmesan and croutons.
Drizzle the dressing over the top and toss gently until evenly coated.

Serve and Enjoy:

  • Serve the salad immediately with additional Parmesan cheese and freshly ground black pepper, if desired.

Notes

  • Grill Time Variations: Depending on the thickness of the chicken, grilling times may vary. Always ensure the internal temperature reaches 165°F (75°C) for safe consumption.
  • Make-Ahead Tip: You can prepare the chicken and dressing ahead of time and store them separately in the fridge for up to 3 days. Assemble the salad just before serving.
  • Substitute for Croutons: For a gluten-free or lower-carb version, use gluten-free croutons or skip them and add some roasted nuts for crunch.
