Equipment

  • 1 Blender or Food Processor
  • 1 Fine Mesh Sieve (optional, for seed removal)
  • 1 Mixing Bowl
  • 1 Ice Cream Maker (optional, for churning)
  • 1 Shallow Freezer-Safe Dish (for no-churn method)
  • 1 Airtight Container (for storing)

Ingredients

  • 500 g Fresh strawberries hulled
  • 100 g Granulated sugar adjust to taste
  • 2 tbsp Lemon or lime juice
  • 1 –2 tbsp Water optional, for easier blending

Instructions

Step 1: Prepare the Strawberries

  • Wash the strawberries thoroughly under cold water and remove the stems.
  • Hull the strawberries and slice them into halves or quarters for easier blending.

Step 2: Blend the Ingredients

  • Add the strawberries, sugar, and lemon or lime juice to a blender or food processor.
  • Blend the mixture until smooth and uniform. If the mixture is too thick, add 1–2 tablespoons of water to help blend.
  • Optional: Strain the purée through a fine mesh sieve to remove seeds for a smoother texture.

Step 3: Chill the Mixture

  • Transfer the blended mixture to a mixing bowl and refrigerate for 1–2 hours to chill thoroughly.

Step 4: Churn or Freeze

  • Using an ice cream maker: Pour the chilled mixture into the ice cream maker and churn according to the manufacturer’s instructions until thickened and creamy.
  • No-churn method: Pour the mixture into a shallow freezer-safe dish and freeze. Stir the mixture every 30 minutes for 2–3 hours to break up ice crystals and achieve a smooth consistency.

Step 5: Final Freeze

  • Once the sorbet reaches the desired texture, transfer it to an airtight container and freeze for an additional 2–3 hours until firm.

Step 6: Serve

  • Scoop the sorbet into bowls or cones, garnish with mint leaves or fresh strawberries, and enjoy!

Notes

Recipe Notes

  1. Choosing Strawberries: Opt for ripe, fragrant strawberries for the best flavor. Avoid underripe berries, as they can make the sorbet too tart.
  2. Sweetness Adjustment: Taste the purée before freezing and adjust the sugar to suit your preferences.
  3. Prevent Freezer Burn: Press plastic wrap or parchment paper directly onto the surface of the sorbet before sealing the container to avoid ice crystals.
  4. Storage: The sorbet is best enjoyed within a week.
  5. Flavor Variations: Add herbs like mint or basil, or mix in other fruits like raspberries or mango for unique flavors.
