  • 1 pound 450 g boneless, skinless chicken breast or thighs

  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Pita Assembly

  • 4 pita breads whole wheat or regular
  • 1 cup hummus store-bought or homemade
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber slices
  • 1 cup lettuce leaves romaine or mixed greens
  • Optional toppings: ¼ cup crumbled feta cheese ¼ cup sliced olives, or a drizzle of tahini

Instructions
 

Step 1: Season and Cook the Chicken

  • In a mixing bowl, combine the olive oil, paprika, cumin, garlic powder, onion powder, salt, and pepper.
    Mix well.
  • Rub the seasoning mixture evenly over the chicken.
  • Heat a skillet or grill pan over medium heat. Cook the chicken for 6-7 minutes per side until fully cooked and the internal temperature reaches 165°F (74°C).
  • Let the chicken rest for 5 minutes, then slice it into thin strips.

Step 2: Warm the Pita

  • Heat the pita breads in a dry skillet over low heat for 1-2 minutes per side, or wrap them in foil and warm in a 350°F (175°C) oven for 5 minutes.

Step 3: Assemble the Pita

  • Spread a generous layer of hummus onto each pita.
  • Top with lettuce leaves, cucumber slices, and cherry tomatoes.
  • Add the sliced chicken and any optional toppings like feta cheese, olives, or tahini.

Step 4: Serve

  • Fold the pita gently or leave it open-faced, and serve immediately.
