Ingredients
  

  • 4 –5 medium carrots peeled and shredded
  • ½ cup raisins or golden raisins
  • ½ cup mayonnaise or Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon honey or maple syrup
  • ¼ teaspoon salt
  • Pinch of cinnamon optional

Instructions
 

  • Prepare the Carrots: Peel and shred 4–5 medium carrots using a box grater, food processor, or julienne peeler.
  • Soften the Raisins: If using dry raisins, soak them in warm water for 5–10 minutes and drain well before adding to the salad.
  • Make the Dressing: In a small bowl, whisk together ½ cup mayonnaise, 1 tablespoon lemon juice, 1 tablespoon honey or maple syrup, ¼ teaspoon salt, and a pinch of cinnamon (optional).
  • Combine the Salad: In a large mixing bowl, add the shredded carrots and raisins.
    Pour the dressing over the top and gently stir until everything is evenly coated.
  • Chill and Serve: Cover the salad and refrigerate for at least 30 minutes before serving for the best flavor.
    Enjoy cold!
