Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 2 medium tomatoes sliced
  • 8 oz fresh mozzarella sliced
  • 1/4 cup fresh basil leaves
  • 2 tablespoons balsamic glaze

Instructions
 

Prep the Chicken Breasts

  • Begin by seasoning the chicken breasts with salt, pepper, garlic powder, and dried oregano.
    Slice the chicken horizontally if it’s too thick for quicker cooking.

Cook the Chicken

  • Heat olive oil in a large skillet over medium heat.
    Add the seasoned chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through.
    The internal temperature should reach 165°F (74°C). Remove from the skillet and set aside to rest.

Assemble the Caprese Topping

  • While the chicken rests, slice the tomatoes and fresh mozzarella. Tear the basil leaves into smaller pieces.

Top the Chicken

  • Place the chicken breasts on a serving plate. Layer each piece with mozzarella, tomato slices, and basil leaves.

Melt the Cheese

  • Cover the skillet with a lid or place the assembled chicken under the broiler for 2-3 minutes until the mozzarella is melted and bubbly.

Finish with Balsamic Glaze

  • Drizzle balsamic glaze over the top of the chicken, tomatoes, and basil. Serve immediately and enjoy!

  • Grill Option: For a smoky flavor, feel free to grill the chicken instead of pan-searing it.
  • Balsamic Glaze: If you don’t have balsamic glaze, you can reduce balsamic vinegar with a bit of honey in a small saucepan until it thickens into a syrup.
