Ingredients
  

  • 8 large eggs
  • 4 flour tortillas or corn tortillas
  • 4 strips bacon or 1 cup cooked breakfast sausage or chorizo
  • 1 cup shredded cheddar cheese or Monterey Jack cheese
  • 1 avocado sliced
  • ½ cup salsa or pico de gallo
  • ¼ cup sour cream optional
  • ¼ cup fresh cilantro chopped
  • 1 jalapeño sliced (optional)
  • 1 tsp olive oil or butter
  • Salt and pepper to taste

Instructions
 

Cook the Protein:

  • In a skillet, cook bacon over medium heat until crispy.
    Alternatively, brown sausage or chorizo in the same pan. Once cooked, remove from the skillet and set aside.

Scramble the Eggs:

  • In a separate bowl, whisk eggs with salt and pepper.
    Heat a bit of oil or butter in a skillet over medium-low heat, then pour in the eggs.
    Stir frequently to scramble until they are soft and fluffy, then remove from heat.

Warm the Tortillas:

  • Warm the tortillas in a dry skillet over medium heat for 30 seconds on each side, or until soft and slightly charred, if desired.

Assemble the Tacos:

  • Place a warm tortilla on a plate.
    Spoon scrambled eggs into the center, then top with cooked protein (bacon or sausage), shredded cheese, avocado slices, salsa, and cilantro.
    Add any additional toppings like sour cream or jalapeños.

Serve and Enjoy:

  • Fold the tortillas over the fillings, and enjoy your delicious breakfast tacos immediately!
