Beef Cauliflower Shepherd’s Pie is a low-carb, gluten-free twist on the classic shepherd's pie.
The hearty ground beef filling is cooked with savory vegetables and aromatic herbs, then topped with a smooth cauliflower mash for a creamy and satisfying finish.

Equipment

  • 1 large skillet
  • 1 Medium pot for steaming cauliflower
  • 1 9x13-inch baking dish
  • 1 Potato masher or food processor (for mashing cauliflower)
  • 1 Baking tray (optional for broiling top)

Ingredients
  

For the Beef Filling:

  • 1 lb 450g Ground Beef
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 large Carrots diced
  • 1 cup Frozen peas
  • 1 cup Beef broth
  • 1 tsp Thyme
  • 1 tsp Rosemary
  • Salt and pepper to taste

For the Cauliflower Topping:

  • 1 medium Head of cauliflower
  • 3 tbsp Butter
  • 2 tbsp Heavy cream
  • 1 tsp Garlic powder
  • Salt and pepper to taste

Instructions
 

Prepare the Cauliflower Mash:

  • Cut the cauliflower into florets and steam or boil until tender (about 10-15 minutes).
  • Drain the cauliflower and mash it with butter, heavy cream, garlic powder, salt, and pepper until smooth. Set aside.

Cook the Beef Filling:

  • In a large skillet, cook the ground beef over medium heat until browned.
  • Add the chopped onion and garlic and cook until soft, about 5 minutes.
  • Stir in the diced carrots, peas, beef broth, thyme, rosemary, and season with salt and pepper.
  • Let the mixture simmer for about 10 minutes until the vegetables are tender and the broth reduces slightly.

Assemble the Shepherd’s Pie:

  • Preheat the oven to 375°F (190°C).
  • Spread the beef mixture evenly in the bottom of a greased 9x13-inch baking dish.
  • Top with the mashed cauliflower, spreading it evenly or creating peaks with a spoon.
    Optionally, add cheese on top for a golden crust.

Bake:

  • Bake for 20-25 minutes or until the top is golden brown.
  • Let it cool for a few minutes before serving.

Notes

  • For a dairy-free version, substitute the butter and heavy cream with olive oil and coconut cream.
  • You can add extra vegetables such as mushrooms or bell peppers to the beef filling for more variety.
  • This recipe can easily be made ahead and stored in the refrigerator for up to 3 days or frozen for up to 3 months.
  • If you prefer a crispy top, broil the cauliflower topping for 2-3 minutes after baking to get a golden, crispy texture.
