Ingredients
  

Main Ingredients:

  • 1 lb ground beef
  • 3 cups cauliflower rice fresh or frozen
  • 2 tbsp avocado oil
  • ½ cup onion finely chopped
  • 2 cloves garlic minced
  • ½ cup bell pepper diced
  • 2 eggs beaten
  • 2 tbsp soy sauce or coconut aminos for keto
  • 1 tsp sesame oil
  • ½ tsp ground ginger
  • ½ tsp red pepper flakes optional, for heat
  • 2 green onions sliced, for garnish
  • ½ tsp salt
  • ½ tsp black pepper

Instructions
 

Step 1: Sauté the Beef

  • Heat 1 tbsp avocado oil in a large skillet over medium-high heat.
    Add ground beef, breaking it apart with a spatula, and cook for 5–6 minutes until browned. Remove from the pan and set aside.

Step 2: Cook the Vegetables

  • In the same skillet, add the remaining 1 tbsp avocado oil, followed by onion, bell pepper, and garlic. Sauté for 2–3 minutes until softened.

Step 3: Add the Cauliflower Rice

  • Stir in the cauliflower rice and cook for 5–7 minutes, stirring occasionally, until the rice becomes tender and slightly golden.

Step 4: Scramble the Eggs

  • Push the cauliflower rice to one side of the skillet.
    Pour the beaten eggs into the empty space and scramble until fully cooked.

Step 5: Combine and Season

  • Return the cooked ground beef to the skillet. Stir in soy sauce, sesame oil, ground ginger, red pepper flakes, salt, and black pepper.
    Mix everything well and cook for an additional 2 minutes.

Step 6: Garnish and Serve

  • Remove from heat, top with sliced green onions, and serve immediately.

Notes

  • Make it spicy: Add extra red pepper flakes or a dash of sriracha for a kick.
  • Use different proteins: Swap beef with ground turkey, chicken, or shrimp for variety.
