Ingredients
  

  • 2 slices Whole-grain bread or your preferred type of bread
  • 1 ripe Avocado
  • 2 large Eggs
  • Salt to taste
  • Pepper to taste
  • 1 tbsp Olive oil for frying the eggs
  • 1 tsp Lemon juice optional, for seasoning the avocado

Instructions
 

  • Toast the Bread: Place the slices of bread in a toaster or grill pan.
    Toast until golden brown and crispy on both sides. Set aside.
  • Prepare the Avocado: Cut the avocado in half and remove the pit.
    Scoop the flesh out into a bowl and mash it with a fork until smooth, leaving some texture.
    Add a pinch of salt, pepper, and a squeeze of lemon juice (if desired), then mix to combine.
  • Cook the Egg: Heat a non-stick skillet over medium heat and add olive oil. Crack the eggs into the pan and cook to your preferred level of doneness (fried, poached, or scrambled). For fried eggs, cook for about 2-3 minutes for runny yolks. For scrambled, whisk the eggs and cook for about 2-3 minutes, stirring gently.
  • Assemble the Toast: Spread the mashed avocado generously over the toasted bread.
    Top with a cooked egg.
    Season with extra salt, pepper, and any additional toppings you like, such as chili flakes, fresh herbs, or cheese.
  • Serve: Enjoy immediately while the toast is crispy and the egg is warm!
