Ingredients
  

  • 2 ripe avocados avocado, mashed
  • 4 slices bread any type: sourdough, whole wheat, gluten-free
  • 1 tablespoon olive oil or butter for toasting
  • Salt to taste
  • Pepper to taste
  • Optional seasonings: garlic powder chili flakes, or lemon juice

Optional toppings:

  • 2 eggs fried or scrambled
  • 2 tablespoons crumbled feta cheese
  • 1 small tomato sliced
  • Fresh herbs like parsley or cilantro for garnish

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Cut bread into circles that will fit into muffin cups.
    Lightly toast the bread in a skillet or toaster until golden and crisp.
  • Prepare muffin tin: Brush the tin with olive oil or butter, then press the toasted bread into each cup, forming a cup shape.
  • Mash avocados: Scoop the avocado into a bowl, mash it with a fork, and season with salt, pepper, and any optional seasonings like garlic powder or chili flakes.
  • Assemble: Spoon the mashed avocado into each bread cup, spreading evenly.
    You can add a fried egg, feta, or other toppings at this point.
  • Bake for 5-7 minutes, until the bread is crisp and the avocado is heated through.
  • Serve: Garnish with fresh herbs or additional toppings, and enjoy immediately.
