Equipment

  • 1 cast-iron skillet (10-inch)
  • 1 Mixing Bowl
  • 1 hand mixer or stand mixer
  • 1 Whisk
  • 1 spoon or spatula
  • 1 measuring cup and spoons

Ingredients

  • 1/2 cup 115g Butter (softened)
  • 3/4 cup 150g Brown sugar (packed)
  • 1/4 cup 50g Granulated sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 2 cups 240g All-purpose flour
  • 1/2 teaspoon Baking soda
  • 1 1/2 teaspoons Ground cinnamon
  • 1/4 teaspoon Salt
  • 2 Medium apples peeled and diced, preferably Granny Smith
  • 1/2 cup 60g Chopped walnuts or pecans (optional)

Optional toppings:

  • Vanilla ice cream
  • Caramel sauce
  • Whipped cream

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 10-inch cast-iron skillet with butter or non-stick spray.
  • In a large bowl, cream together softened butter, brown sugar, and granulated sugar until smooth and fluffy. This should take about 2-3 minutes with an electric mixer.
  • Add eggs one at a time, beating well after each addition, and then stir in the vanilla extract.
  • In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Fold in the diced apples and optional chopped walnuts (if using), ensuring they are evenly distributed throughout the dough.
  • Transfer the dough into the prepared skillet and spread it out evenly.
  • Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  • Cool for 10-15 minutes before serving. Optionally, top with ice cream, caramel sauce, or whipped cream for extra indulgence.

Notes

Recipe Notes

  • Apple Choice: Granny Smith apples work wonderfully in this recipe due to their tartness, but feel free to use your favorite apple variety. Just keep in mind that sweeter apples will result in a sweeter cookie.
  • Add-ins: Walnuts or pecans can add a delightful crunch, but if you're making the recipe nut-free, simply leave them out.
  • Skillet Size: This recipe is designed for a 10-inch cast-iron skillet, but you can use other oven-safe skillets as well. The baking time may vary slightly depending on the size of the skillet.
  • Storage: Store leftover cookie in an airtight container at room temperature for up to 3 days, or refrigerate it for up to 5 days. You can also freeze it for up to 3 months. Reheat in the microwave or oven before serving for the best texture.
