Ingredients
  

  • 2 cups Rolled oats
  • 2 cups Milk dairy or plant-based
  • 2 large Eggs
  • 2 medium Apples peeled and diced
  • 1/4 cup Maple syrup or honey or your preferred sweetener
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla extract

Optional: 1/2 cup chopped nuts (walnuts, almonds) or dried fruits (raisins, cranberries)

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease or line a 9x9-inch baking dish with parchment paper.
  • In a large bowl, combine the rolled oats, ground cinnamon, baking powder, and salt. Stir well to evenly distribute the dry ingredients.
  • In a separate bowl, whisk together the eggs, milk, maple syrup (or honey), and vanilla extract until smooth.
  • Add the wet mixture to the dry oat mixture, stirring until everything is fully combined.
  • Gently fold in the diced apples and optional nuts or dried fruits (if using).
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Bake for 35-40 minutes or until the top is golden brown and the oatmeal has set in the center.
  • Let the baked oatmeal cool for a few minutes before slicing and serving.
    You can top with a drizzle of maple syrup, a dollop of yogurt, or fresh fruit if desired.

Notes

  • For a vegan version, replace the eggs with flax eggs (1 tablespoon flaxseed meal + 3 tablespoons water for each egg) and use plant-based milk such as almond or oat milk.
  • Feel free to add your favorite toppings such as yogurt, granola, or fresh berries to enhance the dish.
  • You can make this recipe ahead of time and store it in the fridge for up to 4-5 days. Simply reheat before serving.
